Zucchini gratin with Teqiwi

A good gratin goes a long way. With some added Teqiwi this will be a weekly staple for sure!


Serves 2

  • 2 zucchini (1.5kg)
  • 2 eggs
  • 20 cl light cream
  • 1 tbsp curry powder
  • 1 garlic clove, minced
  • salt and pepper
  • grated mozzarella
  • 2 tsp Teqiwi


1) Wash and peel the zucchinis. Cut them into thin slices and place them in a gratin dish.
2) Beat the eggs and cream in a bowl. Add the curry powder and garlic, and season with salt and pepper. Add the Teqiwi.
3) Pour this mixture over the zucchinis and mix well in the dish, so that the ingredients are well distributed. Sprinkle with grated mozzarella to taste.
4) Cover with aluminium foil and bake at 180 °C for 30 minutes, then remove the foil and bake for a further 10 minutes to golden.


Optional: add Teqiwi sauce on top before serving.
